Specifically designed to maintain our unique 18⁰ cutting edge, the hand held sharpener uses the angled ceramic wheel to draw water from the shallow reservoir which acts as a lubricant (similar to a whetstone). With light pressure, the knife is run back and forth along the groove to freshen the blade and maintain that razor sharp cutting edge.
